Healthy Stir Fried Chicken with Vegetables (Ga xao rau cu)

A dish is both delicious and nutritious,to balance the nutrilite between protein of animals and protein of vegetables. This is good idea for your family meals.


Level: Medium
Preparation: 20 minutes
Processing: 30 minutes


Ingredients:

  • 2 tablespoons cooking oil
  • 250g boneless, skinless chicken chests, cut into pieces.
  • 2 cloves garlic, minced
  • 2 tablespoons oyster sauce
  • 1 cup broccoli floret
  • 1 cup red bell pepper, seeded and sliced into thin strips
  • 1 cup radishes, cut into slices.
  • 1 cup sliced cabbage
  • 1 cup sliced celery
  • 1 cup bean sprouts
  • 1 cup sliced green squash
  • 1 cup chopped scallions
  • 1 teaspoon salt
  • ½ cup water
  • 2 tablespoons soy sauce
  • Cornstarch

Directions:


Step 1
Heat oil in a thick and large skillet.
Add chicken,garlic and oyster sauce in frying skillet,stirring constantly for 10 minutes.
Add broccoli, green peppers,radishes,cabbage,bean sprouts,green squash and green onion in the skillet, to mix all of them.

Step 2
Add salt into the mixture,mix well and fry for 6-8 minutes.
Mix water, soy sauce and cornstarch in small bowl, stir well and add them into the pan.
To continue cooking about 1-2 minutes until the sauce thickens.
Note: Vegetables can be cut depends on your favourite as long as they are beautiful.

Vietnamese fish hotpot (Lau ca)

The hot pot has a pleasant sweet taste of seafood, is served with rice vermicelli,the fish hot pot is a delicious dish for your family.

Ingredients

Red carp,sea bass,grey mullet,mudfish,salmon,notopterus (about 100g each), 2/3 bowls of coconut milk, an onion,spices,Vietnamese Vietnamese chili sauce,ketchup,fish sauce, Thai yellow curry paste, two liters of bouillon are made from the shrimp and pork bones, 0.5 kg of rice vermicelli.
Spinach, neptunia oleraceae, banana flower, water-lily,loofah flower,pumpkin flower,shallot flower,tomatoes,seaweed,Indian taro are cut into pieces.


Implementation:

All fishes are washed,cut into thin slices. Notopterus are kneaded carefully.

Vegetable are washes,to drain, put on disk. Slice tomatoes and onions vertically (6 - 8 pieces) to cooked with broth.

To boil broth,add coconut milk into the pot. Add Vietnamese chili sauce,ketchup,fish sauce,Thai yellow curry paste, sugar, salt into the broth depends on your taste. Add the tomatoes, chopped onion and a few Indian taro,seaweed and cook for another 5 minutes.

When serves, put the pot on the stove.Served with varied vegetables and rice vermicelli.

Duck cook in fermented beancurd sauce (Vit nau Chao)

Vietnamese-Food.Org - To have a delicious Duck cook in fermented beancurd sauce, you need to use a few secrets below:

Choose ducks:
You should choose wild goose or duck grass (more meat, less fat).
Experience: Put your hands on the duck chest,if the duck chest is plump,the ducks look healthy,you can buy them.For ducks have prepared, you should note skin of them,the skin is yellow, duck chest is plump,the ducks are delicious.


To mix duck with spices:
If you want to the duck cook in fermented beancurd sauce is delicious,you have to marinate the meat of duck with spices before cooking. Marinate 5 fermented bean curd with a kg meat of duck, add a little sauce, sugar, ginger, garlic, peppers. Marinate from 20 to 30 minutes for permeate spices.

Cooking method:
when you make the duck cook in fermented beancurd sauce,you must use ingredients such as potatoes,spinach, coconut milk,rice vermicelli,sugar,delicious fish sauce, cooking oil.
To fry the ducks, pour coconut milk in the pot. To boil, skim froth, To cook over a low heat about 20 minutes for duck is soft,pour potato to the pot and continue cooking. Sometimes add a little coconut milk to the pot to not dry.
When the meat of duck is soft,ladle soup out into bowls.Served with spinach,rice vermicelli.

Note: Because the fermented bean curd is salty,so that you need to add or reduce spices follow your taste when you are cooking.

Sauce: Sauce also contribute to your duck soup more charming and tastier. Make sauce like recipe below: 5 white fermented bean curd+2 tbsp sugar+ 2 tbsp lemon juice.Mix all of them together, add the garlic, chilli,pounded ginger.Served with spinach,sauce and rice vermicelli.

Tàu Hủ Đá Chùa Bà ( Soft Tofu Sweet Soup)

At crossroads between Truong Dinh and Ly Tu Trong street, opposites Dong Nhan inn.

This place is known by many young people,and also last a long time have the opportunity to enjoy again."Tau Hu Da" is still crowed like formerly,still have a pleasant sweet flavour, so the feeling seem to come back in the old days.

It is still simple with a few plastic chairs, a table to roll popiah and har gow and two sisters who sale at this place,they serve while collecting money so quick.

"Tau Hu Da" is reserved for people who do not know to this dish, with ingredients like ingredients of hot sweet tofu soup, also includes soft tofu, coconut milk, but is served with ice and sugar water,but is not sugar water with ginger like you eat hot tofu soup. Strange,slightly cold,fattish, easy to eat, easy to like,eating to talk,eating to remember the my youth ... The girls whom I led to eat this dish, All of them loved it and asked me to lead to this place again.

A roll of popiah is 2000VND (~1 USD), har gow is 5000VND/disk (~ 2.5 USD), To add together same price of one cup "Tau Hu Da".

Sticky rice with pandan leaves (Xoi la nep)

A distinctive pandan flavor,glutinous rice and shredded coconut on the top of the sticky rice,is served with roasted peanuts and sesames.


Ingredients:

-2 bowls of rice
- a few pandan leaves
- 1 tbsp sugar
- 1 teaspoon salt
- shredded coconut
- roasted peanuts and sesames

Implementation:

- Pandan leaves are cut into short pieces.
- Put pandan leaves in the liquidizer with cold water.To filter the mixture to get the first water.
- To dissolve the juice of the pandan leaves with about 2 liters of cold water, pour glutinous rice into the mixture to soak overnight. You remember to add a teaspoon of salt.
-The next day, to fish out, to drain.
-Pour glutinous rice into the steamer. You sometimes stir glutinous rice by chopsticks. Add a little sugars (depends on your preference).
- Roasted peanuts and sesames are crushed.
- Then you ladle it out into the disks,put shredded coconut, roasted peanuts and sesames on the top of the sticky rice.Served when it is still hot.

Glutinous rice is soaked overnight.

Vietnamese Fried crab with peppers and salt (Cua dong rang muoi)

This dish is both sweet-smelling and crispy, can be served with pepper,salt and lemon.


Crab is most popular in South-west VietNam.But nowadays,Crab is also sold at the markets in Saigon. For Vietnamese in the south usually cook crab with varied vegetables, but Vietnamese in the north usually cooks crab with katuk,crab soup.In the west region of Vietnam,when It rains, The people here often catch crabs,wash,then hard-boiled then remove the top shells to take the meat.

The dishes made from crab are very delicious,nutritious and these dishes are foods rich in calcium.Today,these dishes are sold at many restaurants with different cooking methods: hot pot crab, crab noodles ... However,Vietnamese Fried crab with peppers and salt is delicious,this dish has a strange taste,many peoples likes this dish.

Crab has brown colour,the meat of crab is firm.After you bought them from the market, you reject the shells,wash and drain.Pour in peanut oil in the pan, 1 inch deep.Add some minced garlic to frying pan, then put crab to the pan to fried ,add some pepper & salt (unrefined salt) to roast until crab is cooked,peppers and salt is boiled down (depends on your taste that salt be added more or less for the dish).

Put crabs into the large disk with salt and pepper disk or peppers and salt disk.Hot mint is decorated on the disk.Sweet taste of crab meat with pungent taste of peppers and salt will make the dish more interesting.

This dish is delicious, attractive but the price is only 30,000 dong/disk ($1.5 USD/dish). This dish is sold at a restaurant which is located in Hien Thanh alley, District 10, Lac Long Quan Street, District 11 (Tp.HCM), or a few different restaurants also sale this dish with snail.

Fried shrimp and squid with vegetables


The sweet of cucumbers, tomatoes and pineapples are fried together will make the dish is more charming.

Ingredients:

  • 200g squids
  • 100g shrimps
  • Cucumber
  • Half of the tomato
  • 1 slices of pineapple
  • Green onion, fish sauce, salt,MSG, pepper and garlic.



Implementation:

-Squids are washed ,reject squid gall, squids are cut into thin slices.
-Shrimps are washed, reject shrimp shells,shrimp tails are retained.
-Tomatoes are cut into segments, cucumber peel are retained,cross-cut into slices to tast
-Removing the pineapple eyes.
-All mixed vegetables are prepared in advance then put to the disk.
-Pour two teaspoons of cooking oil into the frying pan and turn up the heat to high.when the cooking oil is hot,add the garlic,then add the squids and shrimps to the pan to fried quickly.
-Pour two teaspoons of fish sauce,a little MSG, salt, pepper to the frying pan,the next, add the vegetables to the pan,you should try to this dish again( depend on your taste). Stir-fry about 5 minutes, turn off the heat,add the green onion to the pan to stir.
-Severed with cooked rice when the dish is still hot.
