Stir-fried squid with chilli (Muc chien ot)

Stir-fried squid with chilli is both pungent and greasy, However this dish is not too greasy because it is also somewhat sour.The cooking is very simple.

Level : Medium
Preparation: 10 minutes
Processing: 35 minutes


  • 300g fresh squid
  • 4 tablespoons wheat flour
  • 2-3 tablespoons chili powder (depends on your taste)
  • ½ teaspoon salt, ½ lemon
  • 4 tablespoons mayonnaise sauce.
  • 1 teaspoon chopped garlic
  • 1 teaspoon chopped lemon peel
  • Peanut oil for frying
  • Raw vegetables

Processing stage:

Step 1
Squids are cleaned,to drain.

Step 2
To mix the wheat flour with salt and chili powder.

Step 3
To roll each piece of squid through mixed flour to to stick together.

Step 4
Pour 1/2 to 3/4 inch of oil into the frying pan and turn up the heat to high.when the oil is hot, fry without crowding in the pan until crisp and golden brown on all sides.

Step 5
Remove squids with a slotted spoon and drain on paper towels.

To show raw vegetables on the disk, put squid on it.

To squeeze lemon juice on the squid's disk to have aromatic flavour.

Step 6
To minced garlic and lemon peel.

To mix the mayonnaise with lemon juice,chopped lemon zest and garlic, to stir.

Stir-fried squid with chilli is served as soon as the squids are fried.At that time,the quids are both crispy and sweet-smelling.This dish is very attractive because it is combined sweet taste of squid with the fat of mayonnaise sauce.Lemon juice and lemon peel made this dish has pleasant aroma.
