Previously, "Tấm" rice is known as the food for "poor people" because it is made from broken rice with the price is dirt-cheap.The origin of the dish is unobstrusive, but nowadays,"Tấm" rice really becomes popular in Vietnam.

According to CNN.Go which describes the "Tấm" rice often is accompany with omelet, skin of pork and a pieces of grilled pork chop is put on the surface.This dish is served with sweet and sour sauce.


CNN.GO introduced a popular dish in Vietnam for international friends is Hue beef noodle soup. A beef noodle bowl is warm taste because of the scent of lemon grass,chilli, greasy meat, pork pies, oil cooking and blood of pig.All of them are mixed together to have red mixture.

Stir-fried squid with chilli (Muc chien ot)

Stir-fried squid with chilli is both pungent and greasy, However this dish is not too greasy because it is also somewhat sour.The cooking is very simple.

Level : Medium
Preparation: 10 minutes
Processing: 35 minutes


Ingredients:


  • 300g fresh squid
  • 4 tablespoons wheat flour
  • 2-3 tablespoons chili powder (depends on your taste)
  • ½ teaspoon salt, ½ lemon
  • 4 tablespoons mayonnaise sauce.
  • 1 teaspoon chopped garlic
  • 1 teaspoon chopped lemon peel
  • Peanut oil for frying
  • Raw vegetables


Processing stage:


Step 1
Squids are cleaned,to drain.


Step 2
To mix the wheat flour with salt and chili powder.

Step 3
To roll each piece of squid through mixed flour to to stick together.

Step 4
Pour 1/2 to 3/4 inch of oil into the frying pan and turn up the heat to high.when the oil is hot, fry without crowding in the pan until crisp and golden brown on all sides.

Step 5
Remove squids with a slotted spoon and drain on paper towels.

To show raw vegetables on the disk, put squid on it.

To squeeze lemon juice on the squid's disk to have aromatic flavour.

Step 6
To minced garlic and lemon peel.

To mix the mayonnaise with lemon juice,chopped lemon zest and garlic, to stir.

Stir-fried squid with chilli is served as soon as the squids are fried.At that time,the quids are both crispy and sweet-smelling.This dish is very attractive because it is combined sweet taste of squid with the fat of mayonnaise sauce.Lemon juice and lemon peel made this dish has pleasant aroma.

Vermicelli and Sour Crab Soup (Bun rieu cua)

Crab noodle soup is a favorite dish of many people.I think you should refer to the instructions below of professional chef to cook a delicious dish for your family on the weekend.

Raw materials:

500g field crab,150g tomatoes,30g red pepper,5 medium sized fried tofu, 2 kg rice vermicelli, spices, pepper, sugar, fine shrimp paste. 600g raw vegetables,300g shallots,50g Vietnamese fried shallots,50g powdered red pepper, 100g green onions.


Implementation:


Crabs are cleaned,to reject plastron (under-shell of a crab),then to take crab-roe in the bowl. After that,to fry crab-roe with shallots. Crab bodies are put into the blender, add a little salt, then mix the crab was crushed with cold water,then to filter water,to reject the residue.

- Add the filtering water on the stove, to boil untill crab-roes are resurfaced ,take out the bowl.

-To fry tomatoes with shallots, stir briefly astronauts.Raw vegetables are washed with salt.Tofu is fried again.

-Powdered red chili is mixed with water, sugar,oil cooking,pepper.Then put them into the pot to cook.

-Make the crab mixture: When the crab mixture is boiled again.Now add the tomatoes and
tofu,crab-roe is fried,add a little salt or fish sauce.

-Cook the rice vermicelli and set aside,add rice vermicelli with chopped green onion,Vietnamese fried shallots,tofu to bowl.Add the sauce to bowl.Served with tomatoes, fried peppers, shrimp paste (To depend on your taste).

Tay Ho Snail noodle soup recipes

Ingredients: 5 servings

2 kg medium-sized edible snails,1 kg pork bones,0.5 kg tomatoes,0.5 lettuce, 0.5 kg herbs, 200g green onion, 10g coriander, 10g perilla, 30ml thickened vinegar, 10g salt, 5g sugar.

Implementation:



Snails are washed,hard- boiled, the meat and the meat is taken out th shell. Pork bones are stewed in 90 minutes.To cut the tomato into slices of equal thickness. 50g green onion, coriander, perilla are cut into pieces. 150g green onion cut into pieces 2cm . To cook soups: broth from bone +broth from snail + thickened vinegar+ sugar + salt.

Tomatoes are fried for soups,the green onions are fried in hot oil until golden and crispy.Tomatoes and green onion are added to noodles.Ladle soft noodles into a bowl, add snails, green onion, coriander, perilla into the soup. Served with vegetables, satay, ginger fish sauce

Steamed fish in mint leaves (Ca hap la bac ha)

A very strang dish,it is easy for you to digest,especially,you are not bored to death with it.Because of fish's greasy taste,and the faint aroma of mint leaves.To pick piece of fish,they are rolled with girdle cake,some noodles,a few dill,served with fish sauce then.To enjoy delicious dish.

Ingredients:

- 500 gr basa fish
- 200 grams of fresh mint leaves



-1/4 fresh pineapple
- Spices,hot pepper,garlic


- 1/2 bowl of fish sauce which made from small fish or small shrimps

Implementation:


Step 1: Fish is cleaned,is removed the intestine,is washed with brine.To put fresh mint leaves,2 tablespoons of seeds into.To infuse spices for 15 minutes.


Step 2: Put the fish and fresh mint leaves into the autoclave.The fish is steamed about 15-20 minutes.


Step 3:To make sauce: garlic,red pepper,fresh pineapple is chopped.To mix them with the fish sauce, add 1/2 teaspoon sugar.


Step 4: Put the fish into the plate and decorate with a few fresh mint leaves around.

Delicious dishes for international Women's Day (8/3)

Today, I'm going to presenting to you a few hearty dishes to receive women on International Women's Day (8/3).

1.Fried Shrimp with Honey


Ingredients:

400g sugpo prawn, 150g fried flour, a chicken egg, 100g lettuce, cucumbers, tomatoes to decorate, 1 tablespoon monosodium glutamate, 1/4 teaspoon pepper, cooking oil.
Honey sauce: 4 tablespoons honey, 2 tablespoons water, 1 tablespoon lemon juice, 1/4 teaspoon salt, 2 Shallots. To boil all together.

Implementation:

Marinate sugpo prawns with seasoning salt and pepper.To toss the fried flour,eggs and water together.
To dip shrimps in fried flour then fry until they are golden and crisp.
Put shrimp on plate, to sprinkle honey sauce on surface. To decorate with lettuce, tomato, cucumber. It is served when it is still hot.

2. Fried Rice with pumpkin


Ingredients:

300g white rice,150g pumpkin are cut up as tiny cubes pomegranate seed-shaped, 200g sugpo prawn, 3 bulb of garlic,1 green onion, 2 coriander, 2 teaspoons seasoning seeds, 1/4 teaspoon pepper, 3 tablespoons cooking oil.

Implementation:

  1. To boil sugpo prawn.To reject sugpo prawn's shell, to retain sugpo prawn's head and tail. Then add pumpkin into the boiling water, boiled. Wash the rice,to put the pumpkin and rice in the pot, cooked.
  2. Stir- fry garlic with oil until it is fragrant. Add eggs and white rice to the pan. Stir well. To season with seasoning seeds.
  3. Add pumpkin, sugpo prawn, green onion, coriander and pepper into the cooked rice, stir well.To scoop the fried rice with pumpkin into the disk,served dish when it is still hot.

3. Baked leg of chicken with apples


Ingredients:

4 leg of chickens, 3 apples, 1/2 onion,2 bulb of garlic, 3 corianders,100g tomato, cucumber, salad to decorate, 2 teaspoon seasoning seeds, 1/4 teaspoon pepper, 3 tablespoons cooking oil.

Implementation:

  1. To switch on the oven at a temperature of 2300C for 10 minutes before grill.
  2. Using a knife to stab all over leg of chicken. Marinate leg of chicken with garlic, seasoning seeds, pepper,cooking oil,and coriander. Showing apples and onion into the inox tray, place the leg of chicken on surface. Then to put it in the oven about 40 minutes.
  3. To put the leg of chicken and apples on the plate, to decorate with tomato, cucumber,salad. Served with lemon salt and pepper or chili sauce.

4. Chocolate and milk agar-agar


Ingredients:

500ml milk, 100g white sugars, 3 tablespoons of chocolate flour, 1.5 teaspoons seaweed flour.

Implementation:

Mix the milk,white sugar,chocolate flour and seaweed flour together.
Boiling until all the mixture dissolve. To reject dregs, then pour into glasses.To keep the cool before using.

Grilled mussels with scallion oil and peanuts (chem chep nuong mo hanh)

Ingredients:

- 1 kg mussels
- 1 Da Lat peppers to decorate
- Fish sauce with chilli.
- Roasted peanuts
- Edible fat
- Pork cracklings.
- Green onion
- Soy sauce, monosodium glutamate, sugar.


Implementation:

  • Mussels are cleaned with water,then Soak them with rice water .
  • to boil mussels until they open their mouth.
  • Non-aromatic green onion with edible fat.
  • To boil soy sauce, sugar, monosodium glutamate, fish sauce until highly condensed.
  • Add to mussels tablespoon water color,Roasted peanuts edible fat,Pork cracklings,Green onion then grill about 3 minute
  • Put mussels into the disk, Da Lat peppers are decorated around.

Fat snail fried with Sate (Oc xao mo)

Snail is a dish which many people like. Please introduce for readers Vietnamese-food.Org the snail fried with sate chile sauce.This dish is attractive many people by two specific taste of this dish are fatty and spicy.

Ingredients:

• 1 kg fat snail.
• 5 stalks lemon grass.
• 1 slice of green pepper.
• 100g ginger.
• 1 tablespoon cooking oil.
• 1 tablespoon sate. (The type use with seafood)
• 1 tablespoon minced lemongrass.
• 1 teaspoon minced garlic.
• 1 teaspoon minced chili.
• 2 tablespoons cold water.
• 1/2 teaspoon salt.
• 1 teaspoon sugar.
• flagrant knotweds are ate with fat snail.


Implementation:

1. Soak fat snail with rice water in 30 minutes, clean with water, to dry.
2 Lemon grass is cut stump , wash, to smash them to pieces.
3. Add to the pot 1 cup water + lemon + pepper horns ,to boil fat snails in 5 minutes, then to put out and to dry.
4.To boil oil, add to the minced lemongrass + minced chili +minced garlic , satay + salt + sugar + water.They are fried over medium heat about 10 minutes.
5.Fat snail fried with sate served with flagrant knotwed.
