Kiwi jam for Lunar New Year (Mut Kiwi)

The green kiwi is sour but when you make the jam, it is not still sour. This jam is rather flexible, sweet-and-sour. I think you should eat the kiwi jam on Tet holiday!

Raw materials:

  • 500gr kiwi - about 5 kiwies.
  • 250gr refined sugar
  • 1 lemon
  • 5gr slaked lime
  • 5gr Alum
  • 1 spoonful of salt


To mix slaked lime with 2 litres of water,to decant water and throw away the sediment.

Kiwi is cut the peel, cut into the slice of kiwi, thick slice is 0.7cm.

Kiwi is soaked in the water of slaked lime from 6 to 8 hours or overnight.

To squeeze lemon juice, remove lemon's seeds.

To fish the kiwi out from the water of slaked lime,wash them under the tap

To boil alum with about 1 litre of water. Kiwies can be parboiled about 10 minutes.

Then to fis the kiwi out from the water of alum to drain.

To boil sugar with 1/2 spoonful of salt and 50 ml of water,to stir. After about 5 minutes,to put the lemon juice and kiwi into.

To boil about 20 minutes and then turn off the stove,to take out the kiwi , you still cook the water of sugar untill it is as brown as a berry.

To put the kiwi into the pot again and stir until the sugar to dry up, kiwi has brown colour.

Then sugar is melted, you remove kiwi to the basket about 5 hours to dry and then to maintain them in jars to use.

If the normal jam is not liked by many people because it is not only so sweet but also bad for obese people. Kiwi jam has more vitamin C, so it is very good for you.

Grilled Catfish With Ginger Sauce (Ca Tre nuong Mam Gung)

Raw materials:

  • Catfish: 0.5 kg
  • Ginger
  • Chilli
  • Coriandrum sativum, lemon
  • Annatto oil
  • Fish sauce, pepper, spices


Fish sauce, pepper, spices, ginge, Annatto oil,hot spicy sate are mixed.

- Catfish: cut follow the lenght fish.
- To apply mixture to fish.
- To fish out the disk and place into microwave oven about 6 minutes, press Start (Start).
- Use the fish racks to baking about 3 minutes 40 seconds, press the Start (Start). To take out the fish to the disk and decorate.


- When you wash the Catfish, remember to reject the teeth and scalp. Then take a knife to cut follow the lenght fish, and drain.
- Another way is you put the fish into a plastic bucket, add a little salt or vinegar.

Do not to eat red carp with elsholtzia ciliata .

Xoi Hoa Cau Recipes

Raw materials:

  • 500g tasty glutinous rices
  • 150g green beans
  • Salt, cooking oil


Green beans are soaked in the warm water, filter out the bean peel,to,to strain green beans in a sieve,shake up with salt.

Glutinous rices are soaked in the water about 5 hours ,to fish out, to drain.

Mix the glutinous rices,green beans, salt, cooking oil into the steamer .

Wait for steamed sticky rice is cooked,then you ladle it out into the disks,this disk has more white colour than yellow colour of green beans.

Snail fried with banana soya curd recipes (Oc gia ba ba)

Raw materials:

  • Snails: 300g
  • lean and fat meat mixed: 150g
  • soya curds: 2 each
  • green bananas: 3 each
  • "Cơm mẻ”: 100g
  • Scallion, perilla, shrimp paste with garlic, fish sauce, sugar,cooking oil,turmeric flour.


Snails are cleaned by using lemon juice, added lemon juice into the basin , then you rub snails with lemon juice. You clean with water again. Drain thoroughly, snails will not be viscous and the meat of snail will not be black (you should choose snail with medium size).
Marinated snails with a little salt, sugar, the chopped onion.

Lean and fat meat mixed are cut out some medium pieces. Marinate meat with a little shrimp paste,  fish sauce, sugar, cooking oil, turmeric flour.

Cut soya curd as square, fried crispy.

Green bananas are whittled peel (do not trim too deep because when you cook, it will be crushed). Soak them in the water with lemon juice to not be black. Then you should cut across them.

Saute onion and garlic until it is fragrant. Saute snails about five minutes, fish out immediately, the next,add the lean and fat meat mixed to fry, add shrimp paste, fish sauce,a little sugar . Add "cơm mẻ" into the pot. Boil the soya curds and green banana. The lean and fat meat mixed is cooked,add the snails were fried, the green onion and chopped shiso.

Enjoy it with noodles or rice.
